Croque-Monsieur Pancakes

Brunch glorious brunch a cross between breakfast & lunch & a chance to sit with friends mid morning and graze on delicious food. These Pancakes are so easy to make use your favourite recipe or if you want gluten free, Ive supplied mine. Make the pancakes in advance & just add filling & sauce as you are about to eat.  I like to serve mine with simply roasted tomatoes but you can jazz it up with a beautifully poached egg if you prefer a Madame.

For the Gluten Free Pancake

250gm GF Plain Flour

250ml Milk Semi Skimmed or full fat

2 Large Eggs

25gm Cold Butter cut into small cubes

Sunflower oil

 

Whisk to combine flour milk & eggs.

 

Heat a non stick frying pan with a knob of butter & a little oil. Using a ladle place enough batter into the pan to thinly coat the bottom.  Leave to cook for a minute or two until golden brown. Flip cook for a further minute & place on a plate until needed.

 

 

For the Filling

 

75gm Grated Cheese I used cheddar but Gruyere is traditional

1-2 teaspoons of Gluten Free Wholegrain Mustard

25ml Double Cream

4 Slices Ham Chopped

4 Spring onions finely chopped. Green tops kept separate for decoration

 

For the Sauce

200ml Milk Semi or whole Plus an extra 2 tablespoons for cornflour slurry

1 Heaped Teaspoon Cornflour

25gm Grated Mozzarella

75gm Grated Strong Cheddar

Pepper & Salt to taste

 

 

To make the sauce mix the cornflour with a little milk until you have a slurry about thickness of double cream.

 

Bring 200ml of milk to the boil and slowly add the cornflour whisking to prevent lumps.  Boil for a minute or two remove from heat & whisk in cheese until melted. Season but be careful of salt as cheese & ham will be naturally salty in filling.

 

Mix the Cheeses with the cream and reserve

 

Place a pancake into a non stick frying pan add a heaped teaspoon of the cheesy mustard mix to one half of a pancake add a generous sprinkling of ham and chopped spring onion.

 

Fold over the pancake and gently warm through on a medium to low heat.  If you can cover your frying pan with a lid this helps to melt the cheese. Gently flip and heat until the cheese is melted place onto a plate & into a warm oven.  Repeat process until all of your pancakes are cooked

 

To serve drizzle over warmed cheese sauce and the chopped tops of the spring onion

 

I made 6 pancakes with this mixture with extra pancakes for sweet dish however will depend on size of your pan.
